大溪地香草莢-Vanilla tahitiensis 目前市場上香草莢市場皆以墨西哥香莢蘭品種為主,大溪地香草莢種植面積相對稀少,且價格高昂,主要產地為法屬玻里尼西亞的大溪地群島,於1843年歸屬法國,巴布亞新幾內亞、印尼、馬來西亞、留尼旺島則有少量種植,市場常見的大溪地香草莢為法國品牌 Alain ABEL ,官網價格250克約160歐元,折合台幣約為5400元,不含運費與稅金等,台灣市場行情1公斤約28000元左右,因品種不同,後製方式也有所不同,大溪地果莢可在枝條上自然熟成,採下後直接進行陽光曝曬就有自然的香氣,因果莢含有茴香醛之關係,所以帶有花果香氣,是台灣市接受度很高的果莢,大溪地植株的外觀如下:

植株纖細,莖約0.4公分,節間長約5~10公分,葉片細長為主要特徵,長寬約12~14×0.9~1公分,約有20條縱脈。

果莢較粗,但長度約12-14公分,且呈肉狀,成熟的果莢不開裂,後製可略過殺菁等動作,於枝條上呈咖啡色皆帶有香氣。
