After undergoing a complex process of harvesting and drying, vanilla pods mature internally and release a rich aroma. The vanilla seeds are the tiny black particles scraped from inside the pod; they are the most natural form of vanilla, resembling sesame seeds or even caviar. Since vanilla is the second most expensive spice in the world, these seeds are also known as "vanilla caviar"!

How to Make Your Own Vanilla Caviar
Extracting vanilla caviar is very simple since it requires no further processing, so if you don’t mind a little extra effort, you can make it at home yourself. All you need is high-quality, mold-free vanilla pods, along with a knife, a spoon, and a sealed container (make sure to disinfect all utensils, including cutting boards) to DIY it!
Homemade Vanilla Seeds (Vanilla Caviar)
- Sanitize all the utensils and containers you will use.
- Use a knife to split open the vanilla pod.
- Scrape out the vanilla seeds from inside the pod using a knife or a spoon.
- Place the seeds into a sealed container, and you’re done!
Difference Between Vanilla Seeds and Vanilla Bean Paste

Generally, what is more commonly sold in the market is vanilla bean paste, which is processed by blending vanilla pods, sugary liquid, alcohol, pectin, and other ingredients. It can be directly used in baking or beverages. Each seller uses different amounts of vanilla, resulting in varying flavors, so it is recommended to compare products from multiple sources.
In contrast, vanilla seeds (vanilla caviar) are unprocessed; they are simply the seeds scraped out and preserved. The two products are completely different in both nature and usage!

How to Use and Store Vanilla Seeds and Vanilla Bean Paste
The best method to cook with vanilla pods (including the seeds) is to apply heat. Only by heating can the full vanilla flavor be extracted from the pods (and seeds). Therefore, when using vanilla seeds, it is recommended to mix them with other ingredients and then apply heat through baking, or to simmer them with milk to create vanilla milk. Using vanilla milk in desserts is preferable to adding vanilla seeds directly to already cooked dishes, as the aroma will not be fully released. (Generally, use vanilla seeds in the same way you use vanilla pods!)

Storage for Vanilla Bean Paste: Unopened bottles can be stored in a cool, shaded place. Once opened, you can refrigerate them; however, make sure to seal the bottle cap tightly, as repeatedly opening and closing it allows moisture to enter, which may cause mold.
