Farmer and Chef

Chef Wei Zhenglin, deeply enchanted by the flavors of vanilla beans, has devoted significant effort to studying the history and uses of vanilla beans. Through technology transfer from the Taoyuan Agricultural Research Institute, he began cultivating vanilla plants (Vanilla planifolia) and adopted a new identity as a "vanilla farmer." He founded the brand "Vanilla Knight," focusing not only on creating exquisite desserts but also on promoting the production of premium vanilla beans in Taiwan. Vanilla Knight has become Taiwan's first dessert shop to own a vanilla plantation.

About us

Taiwan Vanilla Bean was introduced in 2007 by the Taoyuan Agricultural Research and Extension Station. We began cultivating it in 2012 and now have over 3,000 plants, yielding a stable harvest of vanilla beans. Due to declining production in its native regions, the price of vanilla has risen yearly, heavily reliant on imports and subject to international market fluctuations. "Vanilla Knight" aims to promote "Taiwan-Grown Vanilla" to encourage more farmers to join this emerging market, reduce food mileage, increase self-sufficiency in ingredients, and cherish every piece of Taiwan’s land.

ABOUT VANILLA

In ancient times, vanilla was a premium spice reserved for nobles. Even today, vanilla remains highly valuable, ranking as the world’s second most expensive spice after saffron. After six months of fermentation and drying, vanilla beans emit a refined, elegant aroma of vanillin, with a slight sweetness and a buttery smoothness. When vanilla seeds are used in desserts, they are like understated, elegant jewelry on a woman—they enhance the overall flavor of the dessert without overpowering the main ingredients, adding depth and richness to the palate.

Even today, it remains highly precious, being the second most expensive spice after saffron. Vanilla beans undergo six months of slow drying and fermentation, producing a buttery, sweet, and smooth aroma. Adding vanilla to desserts enhances all other flavors, making them deeper and more complex.
